If I hadn't done it myself, I'd never have believed it. The omlette does not stick, even though it's not your traditional "nonstick" pan. It flipped beautifully. Also, the pan is gorgeous, I love the curve of the handle (it really does stay cool!) The aluminum heats up quickly, and the heat distribution is very even. The only drawback is that the pan (and handle) are a little on the heavy side. So this pan is not something I'd want to lug around with me for long. I've also found that when I use it on the smaller burners on my stove, the handle is actually so heavy that it tilts the pan. Other than that, it works like a charm, and I'm very pleased with it.
Description of Calphalon Commercial Hard-Anodized 10-Inch Omelet Pan
Omelets, whether firm country-style or tender French, must be cooked quickly and folded in the pan. A classic omelet pan, therefore, is thick-bottomed for rapid, even heating and shallow with steeply sloped sides so omelets can be rolled easily against them. This pan qualifies on all counts, and it's ideal for sautéing and searing, also. Though it's not nonstick like some Calphalon cookware lines, the pan is anodized for stick-resistance as well as hardness. Metal utensils won't harm the surface. For that no-nonsense, professional-kitchen look, Calphalon's Commercial Hard-Anodized cookware wears a matte finish. Contoured, textured, cast-stainless-steel handles resist heating and are triple-riveted for durability and balance. Holes in the handles facilitate hanging on a hook or peg.
