I don't undersatnd why this pan is no longer available. Mine is used every week. From paella to frittata this pan can do everything! Actually use it on my Jumbo Joe weber grill to make paella and it seems nothing can harm this pan. Stove top, oven/broiler even a charcoal grill can't stop this. The only reason I was looking for this online is that I would like to get one for my mom. Ebay here I come.
Description of Calphalon Commercial Hard-Anodized 14-Inch Paella Pan with Lid
Designed for baking paella, this wide, shallow pan comes with a lid so it can also be used for braising on the stovetop or in the oven. It makes a perfectly good roasting pan as well. And, at 14 inches in diameter, it's wide enough to saut? or fry lots of chicken, fish, or vegetables on the stovetop. Though it's not nonstick, like some Calphalon cookware, the matte-finish pan is anodized for stick-resistance as well as hardness. Metal utensils won't harm the surface. Textured handles of cast stainless steel resist heating on the stovetop and go safely into the oven. Made of heavy-gauge aluminum, the pan heats evenly and quickly with no hot spots or warping and carries a lifetime warranty against defects. --Fred BrackOpen Stock
