Description of Calphalon Commercial Hard Anodized 16-Inch French Roast
Made of hard-anodized aluminum for stick-resistance, hardness, and durability, this roasting pan accommodates a 25-pound turkey, two chickens, a large prime rib, a sizable ham, or a family-size lasagna. It's also useful for braising spareribs under foil in the oven because the cast-stainless-steel handles are safe to 700 degrees F. On the stovetop, the handles stay cool, and the pan can be used for browning meat or even sautéing, when the heavy-gauge aluminum's capacity for spreading heat quickly and evenly becomes important. Either in the oven or on the stovetop, the handles stick straight up so they can be easily grasped. The pan measures 16 inches long, 13 inches wide, and 3 inches deep.
