Kitchen and Housewares Reviews of the Calphalon Commercial Hard-Anodized 9-Piece Cookware SetCustomer Review: The pros and cons Summary: 3 StarsI have been using Calphalon Commerical Hard Anodized products for two years. The initial set was bought for us as a gift and then I bought additional pieces to fit our needs. I now have seven pots, two fry pans and one chef's pan. I would not buy these again.
The pros:
These look nice and are priced well. They have a good heft to them and balance nicely (the handles are not so heavy that the pots tip). They cook well, conducting heat evenly. You can put them in the oven. The lids are interchangeable. They form a good fond. They dry quickly.
The cons:
They do not wear well. You cannot use metal utensils, nonstick spray or a dishwasher on these . I followed all of the instructions (no metal utensils, no steel wool, no bleach products, no nonstick spray, no dishwasher, etc.) perfectly and still had problems. In on year, one of my pots wore down so that the aluminum bottom interior of the pot shows through. I also returned one shallow pot because the bottom interior flaked off...even though all I did was make two very smooth risottos in it. Also, if you need to stack your pots, like I do, the finish gets scratched off the top rim. Finally, two of the pots I bought had Calphalon labels on them that left a residue on the pots even though I carefully peeled off the label, washed the area with dish soap and finally resorted to the Calphalon brand cleaner designed for these products.
Despite these problems, I gave these a 3 because they do cook well.
