Customer Review: A great baking set, but you need to learn how to use it

It seems to me that baking times in most recipes are ideal for the flimsy aluminum bakeware that most people buy. However, if you are cooking with steel or cast iron bakeware, you have to adjust down your cooking times often quite substantially. Real metal gets much hotter than aluminum, which does little more than pass on the heat in the air around it. Indeed, that is what Airbake is specifically designed to do. But with this cookware, the metal gets hot and retains the heat well, so the pans' surfaces are actually doing the cooking. The result is more even baking in less time.I did burn a few things in the beginning. But this type of bakeware is much closer to what traditionally was used: thick, heavy materials that really sucked up the heat, like iron and stone. Learn to use this cookware properly and it will be a dream. I have never had better results.
The muffins cups are a little shallower than those of other pans. To me that is a huge plus, because I like smaller portions.
Regarding rust problems: I was never under the impression that these pans were dishwasher safe. Indeed, I thought the labels said they were not. Hand washing and drying has meant no problems, and in general is better for any nonstick surfaces. I know that powder dishwasher detergents can eat through nonstick coatings pretty fast. If you are going to buy something this nice, treat it nicely and don't subject it to the brutal dishwasher.
Regarding sticking: With a little bit of grease or nonstick spray, I have never had a single thing stick. Again, I thought this was mentioned in the instructions.
